Japan’s food markets do not believe in boring. Japan street-food scenes: smoky grills, seafood on skewers, tiny stalls, and far too many things I wanted to try at once. 🇯🇵🔥 Had a great time in Tokyo last week. Too much to do during one trip. Guess I’ll have to go back sometime Last week I traveled to Grand Rapids, Michigan, where I had the privilege of receiving the American Culinary Federation Presidential Medallion. If you could only pick one to put on your burger… People assume chefs only eat elevated food or chase the next great meal. The Standard Follows You... So yeah... 6 years ago I was told I need to go for my ACF Certified Executive Chef certification. I keep putting it off—and putting it off— and putting it off. Until October 2025, when I finally decided to pull the trigger. I took the written right away, but started to drag my feet on the practical exam portion. In late March, I had a fire lit under me that caused me to hurry and get this done.
